Hardly any other grape variety reveals as many facets as this one.
Whether as an aperitif or a pairing for lightly fatty appetizers, the wine always reveals a different facet. While its elegant freshness and unique aromas take center stage as an aperitif, it reveals a much fuller-bodied character when paired with creamy dishes, making it the perfect complement. But that’s not all. It evolves with increasing bottle aging and even changes in the short term depending on weather conditions. At times it is bold and dominant, then again more subtle and sweet.

Vineyard
The vines have been organically farmed since 2016 and were planted between 1995 and 2021. The grapes come 100% from the Eichholz vineyard. The warm, deep-soiled Lange is ideal for Sauvignon. The nutrient-rich soils provide optimal nourishment for the vines and give the wine its unique fruitiness
Production
The grapes are harvested in two passes. One batch is picked early and the second batch when riper. This allows us to capture the two very distinct characteristics of the grape variety, contributing to the wine’s complex aromatics. After a brief maceration on the skins, the grapes are pressed and undergo spontaneous fermentation in stainless steel tanks.
