Vineyard
The vines have been organically cultivated since 2016. The grapes for the Blanc de Noir come from a variety of plots managed by the winery, ranging from Eichholz to Bündte.
Production
The Blanc de Noir is made partly from saignée of the higher-quality Pinot Noir grapes from the Eichholz vineyard or the old vines, and partly from directly pressed Pinot Noir grapes. This gives us both elements: the freshness from the directly pressed grapes and the richness from the saignée. We allow the juice to ferment spontaneously in used 500-liter wooden barrels.
