Vineyard
The vines have been organically cultivated since 2016. As the name suggests, the vineyards are spread throughout Jenins, from the heavier soils of Eichholz to the more barren, higher-altitude plots of Bündte.
Production
The Jeninser is 100% destemmed and then fermented spontaneously in stainless steel tanks. Thanks to the larger vessels, it reaches high fermentation temperatures, which allows for good maceration in a short time. After pressing, the wine is aged for 10 months in old, used 1,600-liter wooden barrels. No new wood.
