The wines from the Eichholz vineyard are characterized by their distinctive structure, aromas of dark berries, and remarkable complexity on the palate. They impressively reflect the unique characteristics of the vineyard and demonstrate that Eichholz is a site of “Grand Cru” caliber. With time, the wine opens up increasingly and reveals its full potential. This wine pairs particularly well with hearty meat dishes such as beef, lamb, or game, as well as with aromatic mushroom dishes. It is also an ideal companion to aged cheeses and autumnal vegetable dishes. Thanks to its elegance and depth, it is also wonderful for festive occasions and a multi-course meal.

Vineyard
The vines have been organically farmed since 2016 and were planted between 1995 and 2000. The Eichholz vineyard has a high clay content, which sets it apart from most vineyards in Jenins. In addition, the soils are very deep and rich in organic matter. This helps the vines access sufficient water even during dry periods.
Production
Depending on the vintage, the Eichholz is fermented with up to 20% whole clusters and undergoes cold maceration for approximately two weeks; that is, the berries are stored at 6°C, during which time the grapes’ own enzymes begin to break down the skins. The berries are then spontaneously fermented in large open wooden vats and punched down by hand. After fermentation, the berries are separated from the juice and aged in barriques for 12 months. 30% new oak.
