The Sweet One
On the nose, it reveals complex tertiary aromas of dried figs, toasted walnuts, and a hint of wood. On the palate, it opens with a full-bodied yet elegant attack, followed by a warming, sweet finish. Perfect with dessert, cheese, or simply as a way to round off the evening by the fireplace.
This warming fortified wine, made from Diolinoir and Merlot, was produced using traditional Portuguese methods. This means that the partially fermented grape juice is fortified with brandy to preserve it. The wine ages for several years in used barriques. Unfiltered, with no added sulfites.

Vineyard
The vines have been organically farmed since 2016 and were planted between 1997 and 2018. The grapes come from the Eichholz vineyard. The plot is situated in a somewhat sheltered spot in the warmest corner of the Eichholz vineyard.
Production
The grapes are harvested on average two weeks after the Pinot Noir harvest and undergo spontaneous fermentation along with the stems. We place the grapes in a large, shallow container, where we crush them with our feet for 2 to 3 hours. Once about half of the grape sugar has fermented, we halt fermentation by adding high-proof brandy. Our Dioli then ages for several years in used wooden barrels before being bottled without the addition of sulfites and without filtration.
