A Graubünden white wine made from 100% Pinot Noir. The term “Kabi” stands for Kabinett, which evokes the German style of Riesling. It features a lively acidity underpinned by a delicate sweetness and a low alcohol content that makes it easy to drink. The perfect aperitif wine on a hot summer day.
The Graubünden Kabi is a lively, salmon-colored wine that captivates with its delicate fruitiness and fresh minerality. On the nose, subtle notes of berries and cherries unfold, accompanied on the palate by a harmonious residual sweetness and an invigorating acidity. The wine is balanced and lively, with a remarkably long finish. The Bündner Kabi is a light, fresh wine for various occasions, such as a carefree summer aperitif.

Vineyard
The vines have been organically farmed since 2016. The grapes are 100% sourced from the Guat vineyard and come from the Swiss clone 2/45. The vineyard is located at approximately 580 meters above sea level and shares similar characteristics with the Bündte vineyard.
Production
The Bündner Kabi was harvested early to preserve the necessary acidity. After a short maceration period, the grapes were pressed and fermented spontaneously in stainless steel tanks. We stopped fermentation approximately halfway through to maintain the low alcohol content of 8.5%.
